  • 1 block (14 oz) extra-firm tofu, pressed and cubed
  • 2 cups fresh pineapple chunks
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 medium onion, sliced
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • 2 tablespoons soy sauce or tamari
  • 2 tablespoons rice vinegar
  • 1 tablespoon maple syrup
  • Neutral oil for cooking

Instructions

  1. Press the tofu between kitchen towels for 15 minutes to remove excess moisture.
  2. Cut the pressed tofu into 1-inch cubes and coat evenly with cornstarch.
  3. Heat oil in a skillet over medium-high heat, add tofu in a single layer, and cook undisturbed for about 3-4 minutes until golden brown.
  4. Flip the tofu and cook for another 3 minutes before removing it from the pan.
  5. In the same skillet, sauté sliced bell peppers and onion for about 5 minutes until caramelized.
  6. Add minced garlic and ginger; stir constantly for about 30 seconds.
  7. Toss in pineapple chunks and let them caramelize for 2-3 minutes.
  8. Mix soy sauce, rice vinegar, and maple syrup in a bowl; pour over the skillet contents along with the crispy tofu. Stir gently for two minutes until everything is well-coated.
