  • 1/2 cup vegan butter (room temperature)
  • 1/2 cup + 2 tablespoons sugar
  • 1/4 cup light brown sugar
  • 1 flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water)
  • 1.5 cups + 3 tablespoons all-purpose flour
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

Instructions

  1. Prepare the flax egg by mixing ground flaxseed with water; let it sit until thickened.
  2. Cream room temperature vegan butter with brown and white sugars until fluffy.
  3. Add the prepared flax egg, maple syrup, and vanilla paste; mix until combined.
  4. In a separate bowl, whisk together flour, baking powder, cinnamon, salt, and cornstarch; gradually mix into wet ingredients.
  5. For the filling, melt vegan butter in a saucepan; stir in pecans, brown sugar, maple syrup, water, cornstarch, and vanilla paste until thickened.
  6. Preheat oven to 350°F (175°C). Form cookie dough balls, roll in sugar, make indents, fill with pecan mixture.
  7. Bake for about 12-15 minutes until golden around edges; cool before transferring.
