  • 1 teaspoon active dry yeast
  • 1 cup warm milk (about 110°F)
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • ¼ cup unsalted butter, melted
  • 1 teaspoon salt
  • Vegetable oil for frying
  • Powdered sugar for dusting

Instructions

  1. Activate the yeast by combining warm milk and active dry yeast in a small bowl. Let sit for 5-10 minutes until frothy.
  2. In a large mixing bowl, whisk together flour, sugar, and salt. Create a well in the center and add the yeast mixture along with eggs, melted butter, and vanilla extract. Stir until a sticky dough forms.
  3. Transfer the dough onto a floured surface and knead for about 5-7 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover it with a towel, and let rise in a warm spot for 1-1.5 hours until doubled in size.
  5. Once risen, roll out the dough to about ½-inch thickness and cut into squares (2×2 inches).
  6. Heat vegetable oil in a pot to around 350°F (175°C). Fry beignets in batches for 1-2 minutes per side until golden brown.
  7. Remove with a slotted spoon and drain on paper towels before generously dusting with powdered sugar.
