  • 28 oz can fire roasted crushed tomatoes
  • 15 oz can red kidney beans (drained and rinsed)
  • 15 oz can pinto beans (drained and rinsed)
  • 1 medium yellow onion (chopped)
  • 3 tablespoons tomato paste
  • 1 ½ teaspoons garlic (minced)
  • 1 tablespoon ground cumin
  • 1 tablespoon chili powder (optional)
  • 1 tablespoon brown sugar
  • 1 teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sauté chopped onion for about 2 minutes until softened.
  2. Add ground beef, breaking it up as you cook until browned (around 5 minutes). Drain excess fat.
  3. Stir in minced garlic and spices (chili powder, cumin, brown sugar, oregano, salt, pepper), along with tomato paste; mix well.
  4. Pour in beef broth and crushed tomatoes; add both types of beans. Bring to a boil then reduce heat.
  5. Simmer covered for 1-2 hours; uncover during the last 30 minutes for thickening.
