2 cups cranberries (fresh or frozen)
1/4 cup maple syrup
Zest & juice of one orange
225 g feta cheese (about 1 1/2 cups crumbled)
1/2 cup plain Greek yogurt
2 tbsp olive oil
Chopped pistachios (for garnish)
Honey (for drizzling)
Instructions
In a saucepan, combine cranberries, maple syrup, orange zest, juice, and nutmeg. Boil over medium-high heat until bubbling, then reduce to medium-low and simmer for 6-10 minutes until the cranberries burst and thicken into a compote. Set aside to cool.
In a food processor, blend feta cheese, Greek yogurt, chili flakes, and olive oil until smooth and creamy.
Spread whipped feta in a bowl, layer with cranberry compote, top with chopped pistachios and drizzle with honey.
