  • 500 g butternut squash (peeled and chopped)
  • 4 cloves garlic (peeled)
  • 1 yellow onion (finely sliced)
  • 2 tbsp olive oil
  • 500 g shelf-stable gnocchi
  • 50 g grated parmesan
  • Juice of 1 lemon
  • 30 g walnuts (roughly chopped)
  • 75 ml milk
  • 50 g turkey strips (chopped)
  • Fresh mozzarella (torn into pieces)

Instructions

  1. Preheat your oven to 180ºC. Toss butternut squash cubes, onion, and garlic with rosemary and olive oil on a baking tray.
  2. Bake for about 30 minutes until tender and golden.
  3. Blend the roasted vegetables until smooth.
  4. In a frying pan, heat olive oil and cook turkey strips until crispy; set aside.
  5. Mix the butternut squash purée with milk in the frying pan and gently stir in gnocchi, cooking for about 8-10 minutes.
  6. Stir in parmesan and lemon juice; add half of the turkey strips.
  7. Top with mozzarella and broil for about 5 minutes until melted.
  8. Serve garnished with remaining turkey strips, walnuts, and parsley.
