  • 1 cup quinoa
  • 2 cups water
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1 cup shredded carrots
  • 1 cup green onions, sliced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped peanuts
  • 1/4 cup sesame seeds
  • 1/4 cup soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced

Instructions

  1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water; bring to a boil. Lower heat and simmer for about 15 minutes until fluffy.
  2. While quinoa cools, chop all vegetables: red bell pepper, cucumber, carrots, green onions, and cilantro.
  3. In a small bowl, whisk together soy sauce, lime juice, honey, sesame oil, ginger, garlic, salt, and pepper for the dressing.
  4. In a large bowl, combine cooled quinoa with chopped vegetables. Pour dressing over and toss gently to mix.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
