  • 3 ancho peppers
  • 3 pasilla peppers
  • 3 New Mexican dried peppers
  • 2.5 pounds beef chuck (cut into bite-sized cubes)
  • 2 teaspoons cumin
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 medium white onion (chopped)
  • 3 jalapeño peppers (chopped)
  • 2 serrano peppers (chopped; optional for extra heat)
  • 4 cloves garlic (chopped)
  • 2 cups beef stock (or dark beef broth)
  • 2.5 cups water (+ more as needed)
  • 2 tablespoons masa harina (corn flour, for thickening if desired)
  • 1 tablespoon brown sugar

Instructions

  1. Start by lightly toasting the dried peppers in a dry pan for about one or two minutes per side.
  2. Soak those toasted peppers in hot water for about 20 minutes until they soften.
  3. After soaking, add the softened peppers to your food processor along with half to one cup of soaking water and a pinch of salt. Blend until smooth.
  4. In a large bowl, toss your cubed beef with cumin, salt, and pepper until well coated.
  5. Heat one tablespoon of olive oil in a large pot over medium-high heat. Add your seasoned beef and sear it for 6-7 minutes until browned.
  6. Remove the beef from the pot and set it aside. In the same pot, add another tablespoon of olive oil, chopped jalapenos, serranos, and onion. Cook for about five minutes.
  7. Stir in minced garlic and cook for another minute.
  8. Return your seared beef to the pot along with the chili paste, beef stock, brown sugar, and masa harina if you'd like it thicker.
  9. Bring everything to a quick boil before reducing heat. Cover and let it simmer gently for about two hours until the beef is tender.
  10. Stir occasionally and adjust the consistency with more water as needed.
