Ingredients
Scale
2 1/2 cups all-purpose flour
1 teaspoon table salt
2 tablespoons sugar
1 cup unsalted butter
1/4 cup ice water
1/4 cup white grape juice
1 lb sweet potatoes
5 tablespoons unsalted butter
1 cup dark brown sugar
3 large eggs
2 teaspoons ground cinnamon
1 teaspoon ground ginger
1/4 teaspoon nutmeg
1/8 teaspoon cloves
1 teaspoon salt
1 1/4 cup evaporated milk
1 tablespoon vanilla extract
Instructions
Prepare the crust by mixing flour, salt, and sugar in a bowl. Cut in cold butter until crumbly. Gradually add ice water and white grape juice until dough forms. Chill while preparing the filling.
Boil peeled and chopped sweet potatoes until tender (about 15 minutes). Drain and mash until smooth.
In a separate bowl, mix softened butter with dark brown sugar until creamy. Add eggs one at a time, then stir in mashed sweet potatoes and remaining filling ingredients until combined.
Preheat oven to 350°F (175°C). Roll out the chilled dough into your pie dish and pour in the filling evenly.
Bake for about 90 minutes or until set; let cool before slicing.
