  • ½ cup melted butter
  • 1 cup brown sugar
  • 23 teaspoons salt (or to taste)
  • ½ cup heavy cream (or milk)
  • ½ cup brown sugar (for topping)
  • ½ cup flour
  • ⅓ cup melted butter (for topping)
  • 1 cup chopped pecans
  • 34 cups mini vegan marshmallows

Instructions

  1. Boil sweet potatoes until tender, then mash in a large bowl.
  2. Preheat your oven to 375°F (190°C).
  3. Mix in eggs, vanilla extract, melted butter, brown sugar, salt, and heavy cream until smooth.
  4. Spread the mixture into a greased 9×13 baking dish.
  5. In another bowl, combine brown sugar, flour, melted butter, and chopped pecans; sprinkle over the sweet potato base.
