  • 1 teaspoon paprika
  • 1 cup bread crumbs
  • 1/2 cup onion, finely chopped
  • 1/2 cup celery, finely chopped
  • 1/2 cup carrots, finely chopped
  • 1/4 cup raisins or dried cranberries (optional)
  • 1/4 cup chopped pecans or walnuts (optional)
  • 2 tablespoons fresh parsley, chopped
  • 1/4 cup chicken broth
  • 2 tablespoons butter, melted
  • 1/4 cup white grape juice or apple juice for basting

Instructions

  1. Preheat your oven to 375°F (190°C). Rinse and dry the Cornish game hens, then season them inside and out with salt, pepper, garlic powder, dried thyme, and paprika.
  2. In a large bowl, mix bread crumbs with chopped onion, celery, carrots, chicken broth, melted butter, and optional ingredients like raisins or nuts until well combined.
  3. Stuff each hen with the mixture without overstuffing. Secure openings with toothpicks if needed.
  4. Place the hens in a roasting pan, drizzle with olive oil, cover loosely with foil, and roast for about 50 minutes. Baste with white grape juice or apple juice every 15 minutes until they reach an internal temperature of 165°F (74°C).
  5. Let rest for 10 minutes before serving.
