  • 1 (15-ounce) can pineapple slices in juice (juice separated)
  • ½ cup packed dark brown sugar
  • ¼ cup sparkling grape juice vinegar
  • 2 tablespoons Dijon mustard
  • 1 tablespoon unsulphured molasses
  • 1 tablespoon Worcestershire sauce
  • Kosher salt & black pepper to taste
  • 1 teaspoon ground allspice
  • Cornstarch mixed with water for slurry

Instructions

  1. Preheat oven to 325°F and spray a baking dish with nonstick spray.
  2. Pat chicken dry and arrange in the dish, placing pineapple slices among them.
  3. In a saucepan, combine pineapple juice, brown sugar, vinegar, mustard, molasses, Worcestershire sauce, and seasonings. Bring to boil then simmer until thickened.
  4. Pour half the glaze over the chicken and bake covered for 30 minutes.
  5. Remove foil, coat with remaining glaze, increase oven temp to 425°F, and bake uncovered for an additional 15-20 minutes until golden brown.
