  • 12 oz penne pasta
  • 1 lb chicken breast (sliced)
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 red bell pepper (thinly sliced)
  • 1 green bell pepper (thinly sliced)
  • 3 cloves garlic (minced)
  • 2 teaspoons Cajun seasoning
  • ½ teaspoon smoked paprika
  • ½ teaspoon red pepper flakes (adjustable)
  • 1 ½ cups heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper to taste
  • Juice of ½ lime

Instructions

  1. Cook the penne in salted water until al dente. Reserve ½ cup of pasta water before draining.
  2. Season chicken with salt, pepper, and Cajun seasoning. Sear in olive oil until cooked through, then set aside.
  3. In the same skillet, add butter, bell peppers, and garlic; sauté for about 3–4 minutes until softened.
  4. Stir in remaining Cajun seasoning, smoked paprika, and red pepper flakes; toast for about 30 seconds.
  5. Pour in heavy cream and simmer; mix in Parmesan until smooth.
  6. Add cooked pasta and chicken back into the sauce, stirring well. If thick, add reserved pasta water gradually.
  7. Garnish with fresh herbs and lime juice before serving.
