  • 23 Tbsps extra virgin olive oil
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 cup almond milk
  • 2 tsps vanilla extract
  • 4 Tbsps unsalted butter, cubed into small pieces
  • 1/3 cup organic brown sugar
  • 1/4 cup pure maple syrup
  • 1 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • Pinch of ground allspice
  • 1 cup organic raisins, soaked and drained
  • 2 cups vegan marshmallows
  • 1 1/2 cups raw pecans
  • 1/4 cup pure maple syrup

Instructions

  1. Cook sweet potatoes by boiling or steaming until tender (15-20 minutes). Drain excess water.
  2. In a mixing bowl, mash the cooked sweet potatoes and add olive oil, almond milk, cinnamon, nutmeg, vanilla extract, and butter until smooth.
  3. Stir in brown sugar, maple syrup, additional spices, and soaked raisins.
  4. Transfer mixture into a greased baking dish; top with vegan marshmallows and raw pecans.
  5. Bake at 350°F (175°C) for 45 minutes to an hour until golden brown.
