  • 4 Persian cucumbers or 1 English cucumber
  • 1 medium ripe avocado
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped pistachios
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh chives
  • 23 tablespoons extra virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon Dijon mustard
  • 2 teaspoons honey
  • 2 cloves garlic – peeled and minced
  • Salt and pepper – to taste

Instructions

  1. Wash and dry the cucumbers. Cut each cucumber in half and smash gently with the flat side of your knife. Chop into 1-inch pieces and place in a bowl.
  2. Peel and chop the avocado into bite-sized pieces; add to the cucumber bowl.
  3. Mix in crumbled feta cheese, chopped pistachios, dill, and chives.
  4. In a separate bowl or jar, whisk together olive oil, lemon juice, Dijon mustard, honey, minced garlic, salt, and pepper until emulsified.
  5. Pour the dressing over the salad ingredients and gently toss to combine. Serve immediately or chill for 30 minutes for enhanced flavor.
