- 3 pounds small red potatoes or fingerlings, scrubbed and quartered
- 3/4 cup sour cream or Greek yogurt for a lighter version
- 3 tablespoons white vinegar
- 1 teaspoon sugar
- 1/2 cup fresh dill, chopped
- 1/4 cup fresh chives or green onions, chopped
- 2 tablespoons fresh parsley, chopped
- 1 small red onion, finely diced (optional)
