Ingredients

Scale
  • 3 pounds small red potatoes or fingerlings, scrubbed and quartered
  • 3/4 cup sour cream or Greek yogurt for a lighter version
  • 3 tablespoons white vinegar
  • 1 teaspoon sugar
  • 1/2 cup fresh dill, chopped
  • 1/4 cup fresh chives or green onions, chopped
  • 2 tablespoons fresh parsley, chopped
  • 1 small red onion, finely diced (optional)
  • Salt and white pepper to taste
  • Fresh dill sprigs for garnish

Instructions

  1. Cook the Potatoes: Boil well-salted water in a large pot. Add quartered potatoes and cook until fork-tender, about 15-20 minutes. Drain and let cool.
  2. Prepare the Dressing: In a large bowl, whisk together sour cream, white vinegar, sugar, salt, and white pepper. Adjust seasoning to taste.
  3. Combine: While potatoes are warm, add them to the dressing and mix gently.
  4. Add Herbs: Fold in chopped dill, chives, and parsley until well combined.
  5. Chill: Cover and refrigerate for at least an hour (ideally 2-3 hours) to allow flavors to meld.
  6. Serve: Stir before serving and garnish with fresh dill sprigs.
