  • 1 pound chicken sausage (mild or hot)
  • 5 tablespoons unsalted butter (divided)
  • 21/4 cups mirepoix (diced carrots, celery, and yellow onion)
  • 4 cups chopped baby gold potatoes
  • 4 cups chicken stock
  • 6 tablespoons flour
  • 3 cups milk (1%, 2%, or whole)
  • 1/2 cup heavy cream
  • 2 cups freshly shredded extra-sharp Cheddar cheese

Instructions

  1. Brown the chicken sausage in a large pot over medium-high heat until fully cooked. Set aside.
  2. In the same pot, melt 1 tablespoon of butter, then sauté the mirepoix for about 5–7 minutes. Add minced garlic and sauté for an additional 30 seconds.
  3. Stir in baby potatoes, dried parsley, dried basil, salt, pepper, and chicken stock. Bring to a boil and then simmer until potatoes are fork-tender (15–20 minutes).
  4. In another pot, melt 4 tablespoons of butter over medium heat, whisk in flour for 1 minute. Gradually add milk while whisking until thickened.
  5. Combine the creamy mixture into the potato soup pot along with shredded cheese and reserved sausage.
  6. Serve warm with optional bread on the side.
