  • ⅔ cup light brown sugar
  • 3 large eggs
  • ⅓ cup vegetable oil
  • ⅓ cup buttermilk (homemade)
  • 1 cup sour cream
  • ¾ cup cocoa powder
  • 200g dark chocolate (70%)
  • Salted caramel sauce

Instructions

  1. Preheat your oven to 350°F (175°C) and grease two round cake pans.
  2. In one bowl, whisk together the flour, baking powder, baking soda, sugars, and salt. In another bowl, mix the eggs, oil, buttermilk, sour cream, cocoa powder, instant coffee, and boiling water until smooth.
  3. Combine wet ingredients into dry ingredients without overmixing.
  4. Pour batter into prepared pans and bake for 30-35 minutes or until a toothpick comes out clean. Cool completely on wire racks.
  5. Prepare the salted caramel sauce by melting sugar over medium heat until amber; whisk in butter and warm cream. Stir in salt and let cool.
  6. For frosting: Melt dark chocolate and blend with whipped cream cheese, cocoa powder, and powdered sugar until creamy.
  7. Assemble your cake by layering with salted caramel sauce and chocolate frosting between layers.
