Ingredients

Scale
  • 8 ounces fettuccine or linguine
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 pound fresh salmon fillet, skin removed
  • 4 cups fresh spinach, washed and roughly chopped
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon lemon zest
  • 2 tablespoons fresh lemon juice
  • Salt and pepper to taste
  • 1/4 teaspoon red pepper flakes (optional)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Bring a large pot of salted water to boil. Cook pasta according to package instructions until al dente (about 8-10 minutes).
  2. Season salmon with salt, pepper, and lemon juice. In a skillet, heat olive oil over medium heat and cook salmon for about 4-5 minutes per side until cooked through. Flake into bite-sized pieces after cooling.
  3. Sauté garlic in the same skillet for about 30 seconds. Add chopped spinach and cook until wilted (2-3 minutes).
  4. Reduce heat to low, add heavy cream and Parmesan cheese while stirring until melted.
  5. Mix in lemon zest, juice, and optional red pepper flakes; adjust seasoning with salt and pepper.
  6. Toss in drained pasta, followed by flaked salmon until well combined.
  7. Serve warm with chopped parsley for garnish.
