  • 9 Roma tomatoes, sliced lengthwise
  • 3 tbsp extra virgin olive oil
  • 2 tbsp unsalted butter
  • 1 yellow onion, diced
  • 4 garlic cloves, minced
  • 1 tbsp fresh thyme, minced
  • 1 tsp Kosher salt
  • ½ tsp ground black pepper
  • 1 28 oz. can San Marzano tomatoes, crushed
  • 1 cup basil, fresh, roughly chopped
  • 1 tbsp sugar
  • 2 cups chicken stock
  • 2/3 cup heavy cream

Instructions

  1. Preheat oven to 375°F. On a baking sheet, place halved Roma tomatoes and drizzle with olive oil, salt, and pepper. Roast for 1 hour.
  2. In a large pot over medium heat, melt butter or heat oil. Sauté diced onion until translucent (about 5 minutes). Add garlic and thyme; sauté until fragrant.
  3. Stir in crushed tomatoes, chopped basil, and sugar. Simmer for 10 minutes.
  4. Add roasted tomatoes and chicken stock; simmer for 30 minutes.
  5. Use an immersion blender to purée until smooth; return to pot.
  6. Stir in heavy cream and warm through before serving.
