- 9 Roma tomatoes, sliced lengthwise
- 3 tbsp extra virgin olive oil
- 2 tbsp unsalted butter
- 1 yellow onion, diced
- 4 garlic cloves, minced
- 1 tbsp fresh thyme, minced
- 1 tsp Kosher salt
- ½ tsp ground black pepper
- 1 28 oz. can San Marzano tomatoes, crushed
- 1 cup basil, fresh, roughly chopped
- 1 tbsp sugar
- 2 cups chicken stock
- 2/3 cup heavy cream
Instructions
- Preheat oven to 375°F. On a baking sheet, place halved Roma tomatoes and drizzle with olive oil, salt, and pepper. Roast for 1 hour.
- In a large pot over medium heat, melt butter or heat oil. Sauté diced onion until translucent (about 5 minutes). Add garlic and thyme; sauté until fragrant.
- Stir in crushed tomatoes, chopped basil, and sugar. Simmer for 10 minutes.
- Add roasted tomatoes and chicken stock; simmer for 30 minutes.
- Use an immersion blender to purée until smooth; return to pot.
- Stir in heavy cream and warm through before serving.
