  • 89 medium starchy potatoes (about 1.2kg), thinly sliced
  • 1 head garlic
  • 1 cup heavy cream
  • 1/4 cup whole milk
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh thyme leaves
  • 1/4 teaspoon nutmeg
  • 1/2 cup grated parmesan cheese, divided
  • 2 cups shredded Gruyère or mozzarella cheese
  • Salt and pepper to taste
  • Fresh chives for garnish

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top off the garlic head, drizzle with olive oil, sprinkle with salt, wrap in foil, and roast for about 30 minutes.
  3. Grease a 9×13-inch baking dish.
  4. Peel and thinly slice the potatoes using a mandoline slicer for even slices.
  5. Layer potato slices upright in the baking dish.
  6. In a saucepan over medium heat, combine heavy cream, milk, butter, half of the parmesan cheese, thyme, nutmeg, salt, and pepper; heat until thoroughly mixed without boiling.
  7. Squeeze roasted garlic from skins into a paste; mix into the cream mixture.
  8. Pour the creamy mixture over the potatoes and cover with foil.
  9. Bake covered for 40 minutes.
  10. Remove foil, sprinkle remaining cheese on top, and bake uncovered for another 30 minutes or until bubbly and golden brown.
  11. Allow to cool slightly before serving; garnish with fresh chives.
