  • 1 head garlic
  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and cut into quarters)
  • Kosher salt
  • 6 tablespoons butter
  • 3/4 cup half and half
  • Fresh ground pepper

Instructions

  1. Preheat oven to 375°F. Cut off the top of the garlic head and drizzle with olive oil. Wrap in foil and roast for about one hour until soft.
  2. In a large pot, cover quartered red potatoes with cold water and add salt. Bring to a boil, then reduce heat and simmer until fork-tender (about 15 minutes).
  3. Drain the potatoes and return them to the pot. Squeeze roasted garlic cloves into the pot.
  4. Warm half-and-half and butter until melted; pour over potatoes along with salt and pepper. Mash until smooth but slightly chunky.
  5. Serve hot, garnished with fresh herbs or extra butter if desired.
