  • 2 lbs. red potatoes, cut into 1 ½ inch pieces
  • 1 head roasted garlic (1215 cloves)
  • ¼ cup salted butter
  • ½ cup vegetable or chicken broth
  • ½ cup heavy cream (to taste)
  • 1 teaspoon fresh thyme
  • 1 ½ teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped parsley

Instructions

  1. Spray the inside of a three-quart slow cooker with cooking spray. Add the red potatoes, fresh thyme, and roasted garlic cloves.
  2. Pour in the butter, broth, salt, and pepper. Stir gently to combine.
  3. Cover and cook on high for 4-5 hours or low for 7-8 hours.
  4. Once cooked, add heavy cream to your desired consistency and mash using a hand mixer or potato masher until smooth.
  5. Taste and adjust seasoning as needed. Serve hot, garnished with chopped parsley.
