  • 1 1/3 cups granulated sugar
  • 2 large eggs
  • 1 egg yolk
  • 5 tablespoons unsalted butter (melted)
  • 1/3 cup canola oil
  • 1 teaspoon pure vanilla extract
  • 3/4 cup all-purpose flour
  • 3/4 cup Dutch process cocoa powder
  • 1 tablespoon cornstarch
  • 1 teaspoon salt
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Spread the halved cherries on the sheet and sprinkle lightly with sugar. Roast for about 10 minutes to enhance their sweetness.
  2. Lower the oven temperature to 325°F (160°C). Prepare an 8×8 inch pan by spraying it with non-stick spray and lining it with parchment paper.
  3. In a bowl, sift together flour, cocoa powder, cornstarch, and salt. In another bowl, beat together granulated sugar, eggs, and egg yolk until light and fluffy.
  4. Mix in melted butter, oil, and vanilla until combined. Gently fold in the dry ingredients until just mixed.
