  • 8 ounces ricotta
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • 1 bunch fresh basil (divided)
  • 1 crusty bread loaf
  • Salt and black pepper to taste
  • Balsamic glaze for drizzling

Instructions

  1. Preheat your oven to 400ºF. Toss cherry tomatoes with 1 tablespoon olive oil, 2 minced garlic cloves, salt, and pepper in a baking dish. Roast for about 20 minutes until caramelized.
  2. In a blender, combine ricotta cheese, remaining garlic clove, 1 tablespoon olive oil, half of the basil leaves, salt, and pepper. Blend until smooth; refrigerate.
  3. Slice the bread into half-inch pieces and brush both sides with the remaining olive oil mixed with the last garlic clove. Toast in the oven for about 10-12 minutes until golden.
  4. Assemble by spreading ricotta on each slice of toast, topping with roasted tomatoes, fresh basil leaves, and a drizzle of balsamic glaze.
