Instructions
In a bowl, whisk together ranch dressing, Parmesan cheese, olive oil, minced garlic, parsley, black pepper, garlic powder, and lemon juice (if using) to create a marinade.
Marinate the cubed chicken in the mixture for at least 30 minutes in the refrigerator.
If using wooden skewers, soak them in water for about 15 minutes to prevent burning.
Thread marinated chicken onto skewers, leaving space between pieces for even cooking.
Preheat grill to medium-high heat and grill skewers for 10-15 minutes, turning occasionally until cooked through (165°F/75°C).
Let rest before serving; garnish with parsley or additional Parmesan if desired.
