  • 2 tsp vanilla extract

  • 180 ml vegetable oil
  • 400 g pumpkin puree
  • 230 g all-purpose flour
  • 2 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1 tsp ground ginger
  • ¼ tsp nutmeg
  • ¼ tsp ground cloves
  • ⅛ tsp ground black pepper
  • 150 g unsalted butter
  • 80 g brown sugar
  • 160 g cream cheese
  • 220 g icing sugar
  • orange food color
  • pumpkin seeds

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, mix white and brown sugars with vegetable oil. Add eggs and vanilla extract; whisk until smooth.
  3. Stir in pumpkin puree until fully combined.
  4. In another bowl, mix flour, baking powder, baking soda, and spices.
  5. Gradually add dry ingredients to the wet mixture; fold gently until just combined.
  6. Pour batter into greased cake pans and bake for about 60 minutes or until a toothpick comes out clean.
  7. Let cool completely before frosting.
  8. For frosting: Beat together unsalted butter and brown sugar until fluffy; mix in cream cheese and icing sugar until smooth.
  9. Frost cooled cake generously and decorate as desired.
