  • 2 double shots of blonde espresso
  • ¼ cup packed light brown sugar
  • 2 tbsp pumpkin puree
  • ½ cup warm water
  • 1 tsp vanilla extract
  • 12 cups ice cubes
  • Cold oat milk, to taste

Instructions

  1. In a saucepan, whisk together brown sugar, pumpkin puree, cinnamon sticks (or pumpkin pie spice), and warm water over low heat for 2-3 minutes until slightly thickened.
  2. Remove from heat and stir in vanilla extract (and maple extract if using). Strain if desired.
  3. Cool the syrup and store in an airtight container in the fridge.
  4. In a sealable jar, combine one double shot of espresso with two tablespoons of syrup and ice cubes. Seal tightly.
  5. Shake vigorously for 20-30 seconds until blended.
  6. Pour into a glass (without ice), add ice cubes, and top with cold oat milk. Dust with pumpkin pie spice if desired.
