  • 1/2 cup very cold salted butter, diced or grated
  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk), plus extra for brushing
  • 1 teaspoon vanilla extract
  • Optional: Ground spices (cinnamon, ginger, cardamom)

Instructions

  1. Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt until well combined.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the pumpkin purée, buttermilk, and vanilla until just combined—be careful not to overmix.
  5. Turn the dough onto a floured surface and gently pat into an 8-inch circle. Cut into eight wedges.
  6. Place the wedges on the prepared baking sheet and freeze for about 15 minutes.
  7. Brush each scone with buttermilk before baking for 13-15 minutes or until golden brown.
  8. For the glaze, whisk together powdered sugar, buttermilk, and vanilla; drizzle over cooled scones.
