  • 3/4 cup pumpkin purée
  • 1/3 cup buttermilk (or milk)

  • 1/2 cup powdered sugar

  • 1/2 teaspoon vanilla extract
  • optional: 1/4 teaspoon ground cinnamon, ginger or cardamom

Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, brown sugar, baking powder, cinnamon, pumpkin pie spice, and salt.
  3. Cut in cold butter until mixture resembles coarse crumbs.
  4. Gently fold in pumpkin purée, buttermilk, and vanilla until just combined.
  5. Turn dough onto a floured surface; gently shape into an 8-inch circle and cut into wedges.
  6. Freeze for about 15 minutes before baking.
