  • 1/2 cup granulated sugar
  • 1 tsp ground cinnamon
  • 1/3 cup melted butter
  • 4 oz cream cheese (softened)
  • 1/4 cup powdered sugar
  • 3/4 cup canned pumpkin puree
  • 1/2 tsp pure vanilla extract
  • 1 1/2 tsp pumpkin pie spice
  • 1/2 cup heavy whipping cream
  • 2 tbsp powdered sugar (for whipped cream)
  • Chopped pecans (for garnish)

Instructions

  1. Preheat your oven to 400°F. Cut the tortillas into rounds using a cookie cutter.
  2. Mix granulated sugar and cinnamon on a shallow plate. Poke holes in the tortillas with a fork, then brush both sides with melted butter and dip in the cinnamon sugar mixture.
  3. Place tortilla rounds between muffin cups in an upside-down muffin tin and bake for about 10 minutes until golden brown. Allow to cool.
  4. For the filling, beat cream cheese and powdered sugar until smooth, then mix in pumpkin puree, vanilla extract, and pumpkin pie spice.
  5. Whip heavy cream with powdered sugar until stiff peaks form.
