  • 1 1/2 cups rolled oats
  • 1 cup unsalted butter, melted
  • 1 cup brown sugar, packed
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 cups pumpkin puree
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 2 large eggs
  • 1 tablespoon pumpkin pie spice
  • 1 teaspoon vanilla extract
  • 1/2 cup chopped walnuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper.
  2. In a large bowl, mix together flour, rolled oats, brown sugar, baking soda, and salt. Stir in melted butter until combined.
  3. Press two-thirds of the mixture into the bottom of the prepared dish to form the base layer.
  4. In another bowl, whisk together pumpkin puree, granulated sugar, brown sugar, eggs, pumpkin pie spice, and vanilla extract until smooth.
  5. Pour the pumpkin mixture over the base layer and spread evenly.
  6. Sprinkle the remaining crumble mixture on top. Add walnuts if desired.
  7. Bake for 30-35 minutes until golden brown and set. Let cool completely before slicing into squares.
