  • 1 1/4 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp salt
  • 2 1/2 tsp pumpkin spice
  • 225 g dark brown sugar
  • 280 g pumpkin purée
  • 75 g vegetable oil
  • 2 eggs
  • 1 tsp vanilla extract
  • 200 g butter
  • 15 g dark brown sugar
  • 100 g cream cheese
  • 345 g powdered sugar
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In one bowl, whisk together the flour, baking powder, baking soda, salt, and pumpkin spice.
  3. In another bowl, mix dark brown sugar, pumpkin purée, vegetable oil, eggs, and vanilla until smooth.
  4. Gradually combine the dry ingredients into the wet mixture without overmixing.
  5. Line a cupcake tray with liners and fill each liner about two-thirds full with batter. Bake for about 23 minutes or until a toothpick comes out clean.
  6. For the frosting, beat butter and brown sugar until creamy. Mix in cream cheese and gradually add sifted powdered sugar and vanilla until desired consistency is reached.
  7. Once cooled, frost each cupcake generously.
