  • 1/4 cup light brown sugar
  • 1 tablespoon cinnamon
  • 4 tablespoons cold butter (1/4 cup)
  • 2 cups all purpose flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon
  • 2 teaspoons pumpkin pie spice
  • 1/2 teaspoon salt
  • 1 cup canned pumpkin
  • 1/2 cup canola oil
  • 1/2 cup brown sugar
  • 1/4 cup milk
  • 1/4 cup maple syrup

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a 9×9 inch baking dish by greasing it or lining it with parchment paper.
  2. In a large bowl, mix together 2 cups of all-purpose flour, 2 teaspoons of baking powder, 1/2 teaspoon of salt, 2 teaspoons of cinnamon, and 2 teaspoons of pumpkin pie spice until well combined.
  3. In another bowl, whisk together 1 cup of canned pumpkin, 1/2 cup of light brown sugar, 1/4 cup of milk, 1/4 cup of canola oil, and 1/4 cup of maple syrup until smooth.
  4. Pour the wet ingredients into the dry ingredients and stir gently until just combined.
  5. Pour the batter into the prepared baking dish and spread it evenly.
  6. For the crumb topping, combine 1/4 cup each of all-purpose flour and light brown sugar with 1 tablespoon of cinnamon and mix in 4 tablespoons of cold butter until crumbly. Sprinkle over the cake batter.
  7. Bake for approximately 35 minutes, or until a toothpick inserted in the center comes out mostly clean.
  8. Allow to cool for at least 10 minutes before serving.
