  • 1 tbsp olive oil
  • 400g chicken or turkey sausages
  • 1 onion (chopped)
  • 2 stalks celery (sliced)
  • 2 carrots (sliced)
  • 2 cloves garlic (minced)
  • 1/2 tsp dried thyme
  • 3 tbsp plain/all purpose flour
  • 1 litre chicken or vegetable stock
  • 2 bay leaves
  • 100g wild rice
  • 3 medium potatoes (peeled and cut into chunks)
  • 375ml cream or dairy-free alternative
  • Salt to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Remove sausage from casings, crumble into the pot, and cook until browned. Transfer sausage to a plate.
  2. In the same pot, sauté chopped onion, celery, and carrots over low heat for about 10 minutes until softened. Stir in minced garlic and thyme.
  3. Sprinkle flour over the vegetables, mix well to form a roux, then add back the sausage.
  4. Deglaze with a splash of stock before adding remaining stock, bay leaves, and wild rice. Simmer for about 30 minutes.
  5. Stir in cubed potatoes and continue cooking for another 15 minutes until tender. Add cream and season with salt before serving.
