  • 1/2 cup unsalted butter, melted
  • 1/2 cup brown sugar, packed
  • 1 can (20 oz) pineapple slices, drained and cut into small pieces
  • Maraschino cherries, halved
  • 1 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/4 tsp salt

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin by greasing it or lining it with parchment paper.
  2. In a small bowl, mix melted butter and brown sugar until combined; spoon into muffin cups.
  3. Add small pineapple pieces and half a cherry on top of the brown sugar mixture.
  4. In a large bowl, cream softened butter and granulated sugar until fluffy. Beat in egg and vanilla.
  5. Whisk together flour, baking powder, and salt in another bowl; gradually mix into wet ingredients to form dough.
  6. Press approximately 1 ½ tablespoons of dough over the pineapple topping in each muffin cup.
  7. Bake for 12-15 minutes until edges are golden; cool for 5 minutes before flipping onto a cooling rack.
