  • ½ cup brown sugar
  • 2 tbsp melted butter
  • 1 small can pineapple rings, cut into smaller pieces (or fresh pineapple)
  • Maraschino cherries, halved (or use fresh cherries or dried cranberries)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, cream together softened unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Beat in one large egg and vanilla extract until well combined.
  4. In another bowl, whisk together flour, baking powder, and salt. Gradually combine with the wet mixture until just mixed.
  5. Melt two tablespoons of butter in an 8-inch baking dish. Sprinkle brown sugar over it and arrange pineapple pieces.
  6. Scoop cookie dough over the pineapple layer and place cherry halves on top.
  7. Bake for 12–15 minutes or until golden brown around the edges.
  8. Cool in the pan for five minutes before transferring to wire racks.
