Ingredients

  • Boneless, skinless chicken breasts
  • Soy sauce (or tamari for gluten-free)
  • Honey
  • Garlic cloves, minced
  • Fresh ginger, grated
  • Fresh pineapple slices
  • Cauliflower rice
  • Olive oil
  • Green onions, chopped
  • Salt and pepper

Instructions

  1. Marinate the chicken by mixing soy sauce, honey, garlic, and ginger in a bowl. Add the chicken breasts to coat well. Refrigerate for at least 30 minutes.
  2. Preheat the grill to medium-high heat. Grill the marinated chicken for about 6–7 minutes per side until cooked through (internal temperature of 165°F). Grill pineapple slices for 2–3 minutes per side until caramelized.
