  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup whipped topping (Cool Whip), thawed
  • 1 cup packed brown sugar
  • ½ cup light corn syrup
  • ¼ cup unsalted butter
  • 2 large eggs, lightly beaten
  • 1½ cups chopped pecans
  • Pinch of salt

Instructions

  1. In a medium bowl, combine graham cracker crumbs, granulated sugar, and melted butter. Press firmly into the bottom of a 9×13-inch baking dish and chill for 10–15 minutes.
  2. Beat softened cream cheese until smooth; add powdered sugar and vanilla extract. Fold in whipped topping and spread evenly over the chilled crust.
  3. In a saucepan over medium heat, combine brown sugar, corn syrup, and butter. Stir until bubbling; remove from heat and whisk in beaten eggs gradually. Add pecans and a pinch of salt.
