  • 3 ripe bananas
  • 1/3 cup creamy peanut butter
  • 1/2 cup sugar
  • 1/4 cup melted butter
  • 1 teaspoon vanilla extract
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 cup jelly or jam (grape, strawberry, etc.)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×5-inch loaf pan.
  2. Mash the ripe bananas in a bowl until smooth. Add peanut butter, sugar, melted butter, vanilla extract, and egg; mix until combined.
  3. In another bowl, whisk flour, baking soda, and salt together; then gradually mix into the wet ingredients until just combined.
  4. Pour half of the batter into the loaf pan. Dollop jelly over this layer and swirl gently. Add remaining batter on top with more jelly for swirling.
  5. Bake for 50-60 minutes or until a toothpick comes out clean. Cool in the pan for 10 minutes before transferring to a wire rack.
