  • 14 oz turkey sausage or chicken sausage, sliced into ¼-inch rounds
  • 2 cloves garlic, minced
  • 3 cups elbow macaroni or your favorite short pasta
  • 3½ cups chicken broth
  • 1 cup whole milk
  • 1 teaspoon smoked paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 2 cups shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons unsalted butter
  • Optional garnish: fresh parsley or green onions

Instructions

  1. Heat olive oil in a large pot over medium heat. Add sliced turkey sausage and cook until lightly browned (4–5 minutes). Remove and set aside.
  2. In the same pot, sauté minced garlic for about 30 seconds until fragrant.
  3. Add elbow macaroni, chicken broth, whole milk, smoked paprika, black pepper, and salt. Stir well and bring to a boil. Reduce heat to medium-low; cook until pasta is tender (8–10 minutes).
  4. Lower heat and stir in sharp cheddar cheese, mozzarella cheese, and unsalted butter until melted and creamy.
  5. Return the turkey sausage to the pot; stir to combine and heat through for another minute.
  6. Serve warm, garnished with fresh parsley or green onions if desired.
