  • 1 large egg (or 1/4 cup applesauce)
  • 3/4 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/4 cup + 2 tablespoons canola oil
  • 1 teaspoon vanilla extract
  • 1 1/2 teaspoons ground cinnamon
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 2 teaspoons baking powder
  • 2 cups all-purpose flour
  • 1 1/3 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, whisk together pumpkin puree, egg (or applesauce), both sugars, canola oil, vanilla extract, and cinnamon until well blended.
  3. In another bowl, mix salt, baking soda, baking powder, and flour. Gradually combine with the wet mixture until just combined.

  5. Scoop and drop about 12 cookies per lined baking sheet.
