  • 1 lb boneless, skinless chicken breast
  • 8 oz spaghetti
  • 1 cup heavy cream
  • 1 cup shredded Monterey Jack cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup diced onions
  • 2 cloves garlic, minced
  • 1/4 cup chicken broth
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 1/4 tsp smoked paprika
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 cup chopped fresh parsley
  • 1/4 tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the spaghetti according to package instructions; drain and set aside.
  2. In a skillet, heat olive oil over medium heat. Season and cook chicken breasts for 6–7 minutes on each side until fully cooked. Slice into strips.
  3. In the same skillet, melt butter and sauté onions and garlic for 2–3 minutes until softened.
  4. Add chicken broth and bring to a simmer; then stir in heavy cream and let thicken slightly.
  5. Reduce heat and mix in Monterey Jack and Parmesan cheeses until melted.
  6. Toss cooked spaghetti in the sauce until well coated.
