  • 12 ounces spaghetti
  • 2 boneless, skinless chicken breasts
  • 1 cup shredded Monterey Jack cheese
  • 1 medium yellow onion
  • 3 garlic cloves
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 2 tablespoons olive oil
  • 1 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • Salt and black pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Sauté onions for about 3-4 minutes until softened, then add minced garlic and cook for another 30 seconds.
  4. Pour in chicken broth and heavy cream; stir well and bring to a simmer.
  5. Add back cooked spaghetti and chicken; toss to coat in the sauce.
  6. Sprinkle shredded Monterey Jack cheese on top and cover until melted, about 2-3 minutes.
  7. Serve warm, garnished with fresh parsley.
