12 ounces spaghetti
2 boneless, skinless chicken breasts
1 cup shredded Monterey Jack cheese
1 medium yellow onion
3 garlic cloves
1 cup chicken broth
1/2 cup heavy cream
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper to taste
Fresh parsley for garnish
Instructions
Cook spaghetti according to package instructions until al dente. Drain and set aside.
In a large skillet, heat olive oil over medium heat. Season chicken with paprika, Italian seasoning, salt, and pepper. Cook until golden brown, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, melt butter over medium heat. Sauté onions for about 3-4 minutes until softened, then add minced garlic and cook for another 30 seconds.
Pour in chicken broth and heavy cream; stir well and bring to a simmer.
Add back cooked spaghetti and chicken; toss to coat in the sauce.
Sprinkle shredded Monterey Jack cheese on top and cover until melted, about 2-3 minutes.
