Ingredients

Scale
  • 1 1/2 cups salted butter, softened
  • 1 1/4 cups light brown sugar
  • 1 tablespoon pure vanilla extract
  • 2 eggs (room temperature)
  • 4 1/2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon salt
  • 12 ounces milk chocolate (melted)

Instructions

  1. Cream the softened butter, brown sugar, and vanilla in a large bowl until light and fluffy. Add eggs one at a time and mix until combined.
  2. In another bowl, whisk together flour, baking soda, spices, and salt. Gradually add to the butter mixture until a dough forms.
  3. Roll out the dough on a floured surface and cut out pumpkin shapes using cookie cutters. Place on parchment-lined baking sheets.
  4. Freeze cookies for about 15-20 minutes to maintain shape while baking.
  5. Preheat oven to 350°F (175°C). Bake cookies for 8-12 minutes until lightly golden brown; allow cooling.
  6. Brush cooled cookies with browned butter and sprinkle with cinnamon sugar before spreading melted chocolate on half of each cookie and topping with another cookie.
