  • 1 jalapeño, diced
  • 4 cups chicken bone broth
  • 1.5 cups sour cream
  • 1/2 cup shredded Monterey Jack cheese (or a blend of Monterey Jack and mild cheddar)
  • 4 cloves of garlic, minced
  • 1/2 tablespoon dried oregano
  • 1/2 teaspoon chili powder
  • 2 cups frozen sweet white corn
  • 1/2 cup fresh cilantro, chopped
  • 1 lime, juice
  • 3 tablespoons cornstarch
  • 3 tablespoons water
  • Olive oil

Instructions

  1. Sauté onion and jalapeño in olive oil over medium heat until soft.
  2. Add minced garlic, chili powder, and oregano; cook for 1 minute.
  3. Pour in chicken broth and add chicken breasts. Season with salt and pepper; boil then simmer for 10-15 minutes.
  4. Shred the cooked chicken and return it to the pot.
  5. Stir in sour cream, cheese, cilantro, corn, and lime juice.
  6. Thicken by mixing cornstarch with water; add to the chili and simmer for another 10 minutes.
