  • ½ cup kalamata olives, pitted
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (or coconut yogurt)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • Salt and pepper, to taste
  • 3 tablespoons olive oil (for vinaigrette)
  • 2 tablespoons fresh lemon juice (for vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for vinaigrette)
  • ½ teaspoon dried oregano (for vinaigrette)

Instructions

  1. Marinate the steak: Combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Add the steak and let it marinate for at least 30 minutes.
  2. Cook the steak: Heat a grill or skillet over medium-high heat. Cook the steak for 4–5 minutes on each side until medium-rare. Allow it to rest before slicing.
  3. Prepare tzatziki: Mix Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill until serving.
