Ingredients

Scale
  • 1 pound sirloin steak
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups cooked brown rice or quinoa
  • 1 cup roasted chickpeas
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • ½ red onion, thinly sliced
  • ½ cup kalamata olives, pitted
  • ⅓ cup crumbled feta cheese (omit for dairy-free)
  • ¼ cup fresh parsley or dill, chopped
  • 1 cup plain Greek yogurt (use coconut yogurt for dairy-free)
  • ½ cucumber, grated and excess water squeezed out
  • 1 tablespoon fresh dill, chopped
  • 3 tablespoons olive oil (for lemon vinaigrette)
  • 2 tablespoons fresh lemon juice (for lemon vinaigrette)
  • 1 teaspoon honey (omit for strict keto or Whole30)
  • 1 small clove garlic, minced (for lemon vinaigrette)
  • ½ teaspoon dried oregano (for lemon vinaigrette)
  • Salt and pepper, to taste (for lemon vinaigrette)

Instructions

  1. In a bowl, whisk together the olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper. Add your sirloin steak into this flavorful marinade. Let it sit in the refrigerator for at least 30 minutes.
  2. Heat your grill or skillet over medium-high heat. Cook the marinated steak for about 4–5 minutes on each side for medium-rare. Allow it to rest after cooking for 5-10 minutes before slicing.
  3. In a bowl, combine Greek yogurt (or coconut yogurt), grated cucumber (squeeze out excess water), lemon juice, minced garlic, dill, salt, and pepper. Mix well and chill until ready to serve.
  4. In a small jar or bowl, whisk together olive oil, fresh lemon juice, honey (if using), minced garlic, oregano, salt, and pepper until smooth.
  5. Divide your chosen base—whether it's brown rice, quinoa, or cauliflower rice—between serving bowls. Top each bowl with sliced steak, cherry tomatoes, diced cucumber, sliced red onion, olives, feta cheese (if using), and sprinkle on fresh herbs. Finish with the lemon vinaigrette and a generous dollop of tzatziki sauce.
