  • ¾ cup crumbled feta cheese (dairy-free option available)
  • ½ cup fresh parsley, chopped
  • ¼ cup fresh mint leaves, chopped
  • ⅓ cup extra virgin olive oil
  • ¼ cup fresh lemon juice (approximately 2 lemons)
  • 2 cloves garlic, minced
  • 1 teaspoon Dijon mustard
  • 1 teaspoon honey (substitute with maple syrup for vegan option)
  • 1 teaspoon dried oregano
  • ½ teaspoon ground cumin
  • Salt and freshly ground black pepper to taste

Instructions

  1. Drain and rinse the chickpeas under cold water; pat dry.
