  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a bowl, combine sliced onions, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss until coated.
  3. Spread the vegetable mixture evenly in the baking dish and place the fish fillets on top. Squeeze fresh lemon juice over the fish and add lemon zest along with additional seasoning if desired.
  4. Bake uncovered for about 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with chopped parsley and serve with lemon wedges.
